Grilled Whole Red Fish

Serves 4

4 Whole Red Fish, gutted and gilled
1/2 lemon, sliced into circles
Fresh parsley, sage, thyme, rosemary
1/4 cup canola oil
kosher salt
black pepper
Turn the grill on high heat.   Meanwhile, lay the fish on a large tray or cutting board, and coat both sides of the fish with oil. Stuff the cavity of the fish with the lemon and herbs. Sprinkle generous amounts of salt and pepper on both sides.
Take the fish off the tray and place directly on grill and cook (roughly 7-8 minutes per inch), making sure to flip half way through the process. When done, transfer to a clean tray.  Let cool for a minute then put each one, with or without head (there is a tiny bit of meat in there that is quite delicious), onto each plate.

After it has been plated, remove the top layer of skin and, using a fork, disconnect the meat from the bones.  Enjoy!
